This recipe is around $11, but it made a fuck ton. It is gluten free (they probably all are anyway) and dairy free. I’ll admit, I overcooked the meat and dried it out some. Maybe someday there will be good DF sour cream to disguise the taste of my mistakes.
You all know how to cook meat and I clearly don’t, so no tips for you there. Honestly, use chicken. It’s the easiest meat to cook if you are a shitty cook.
Anyway, I seasoned the dry steak with salt, pepper, cumin, and onion powder. While this was cooking, I drained and rinsed a can of pinto beans, black beans, and corn and threw them in a pan to cook on the stove. I cut up a large tomato and tossed that in with the other canned stuff.
My lazy ass microwaved 3 cups of rice. This was seasoned with more salt, oregano, and fresh-squeezed lime juice.
Combine everything and there’s dinner. Good shit.
